OK so i'm assumin that a lemon meringue is a liiiiil too tricky under the circumstances but there's gotta be some sorta fruit fillin that's doable.

You've got pretty good timing, actually. I'm going to the grocery store tomorrow. Meringue isn't happening, easiest ones to do are solid fruits. Apple, cherry, that kind of stuff.
